An ecstasy of flavours accompanied by intense pleasure

A mix of ancient Apulian tradition and innovation from East to West, this is the new concept of cuisine at the Restaurant Vineria Sale e Pepe in San Giovanni Rotondo, open to everyone for lunch and dinner with à la carte menu, guided by chef Libero Scippa.

Manfredoniano of origin, he developed his culinary art in Milan, Naples, Paris, Munich and Köln, then decided to return to his homeland, Apulia, bringing to the table the flavours of the world and combining them with the typical products from the Gargano.
His kitchen brigade is constantly at work to create dishes such as "tartare of Corba Rossa del Lago di Lesina", "watercolour risotto, crustacean pulp, sea urchin emulsion and mullet roe", "Picana di Podolica Garganica with wild herbs and cardamom-flavoured vegetable caponatina", or "white chocolate parfait with toasted almond fillets".
